Paleo Chocolate Cookies

Chocolate. Cookies. Nothing about this is wrong. On a paleo diet, there are a gazillion things you should not eat, like grains. Baking without grains is a challenge. We're not just talking gluten free here, but no grains what-so-ever. That means no buckwheat, oatmeal or corn. I thought gluten-free was tough, this is another galaxy.

But the thing is, once you get used to it, it's really not too difficult! Nut meal works really well in most baked goods I've tried. The main difference is cooking time, really. They need a little more patience, but generally turn out well. Thank goodness!

The second challenge baking paleo is sugar. No more processed sugars for you, and the rest in moderation only. I thought this would be the trickiest part for me. I was a proper sugar addict before we went paleo. And I really do believe the only reason I managed the first crucial weeks was because we were on vacation at the cabin, and we just didn't bring any sweets. The best way to avoid a vice? Just don't have it around! That being said, we do eat sugars, just not the highly-processed-nothing-but-sugar sugars. Unprocessed syrups and sugars like palm sugar, maple syrups, yacon and honey we use, just make sure we don't use too much. Stevia is also brilliant, especially if you can get your hands on the green unprocessed powder. I feel a little uncomfortable with the white power, I don't know what they do to a green plant to make it white... but it sure doesn't seem natural.

Back to the cookies. I had a real craving for chocolate cookies for Valenties. So, I did some searching and found a couple of recipes that could suit my needs. I had some home made almond butter that I needed to use, but I didn't have too much. A combination of two recipes, one using almond butter, and another using almond meal seemed to fit well. The recipes contained a lot of syrup, so I halved the original recipes syrup. I mean, even though you can technically have maple syrup on a paleo diet, doesn't mean you should use half a bottle in one go!

So here you are, my take on the paleo chocolate cookie. Adapted from gourmandeinthekitchen and health bent.

Paleo Double Chocolate Cookies

1 1/2 cups softened butter
2 cups sugar
4 eggs
1 tsp vanilla powder (extract is ok too)
5 cups flour
2 tsp baking powder
1 tsp salt

Yield: 24 small, 10 large

Mix the dry ingredients together. Add in the beaten eggs, syrup and almond butter. Mix until thoroughly combined. Carefully fold in the chocolate chips if you are including them.

Place about 1 tbsp of dough on a baking sheet. The dough should be firm. These cookies will not melt and form cookies, you need to bat them down with your finger to the desired shape. They will puff up a little, but not too much. Bake at 175 C (360F) for about 10-15 minutes.

Cool on a wire rack. They will be soft at first, then turn stiff when cooled.

Best served with cold almond milk!
