White Chocolate Baylies Fudge

I thought the holiday bark was the most successful of the treats I made this year. But I was mistaken, quite surely. Because so many of my friends first and foremost talk about the Baileys Pistachio Fudge I made.  So, it's about time I actually post the recipe I used, which is from this site.

White Chocolate Baylies Fudge

1 can sweetened condensed milk (I used Nestle)
½ cup Baileys Irish Cream
36 oz white chocolate chips (1 kilo)
½ cup raw pistachios, chopped (I used a little extra)

Yield: 40 pieces

Melt the white chocolate in a double boiler, carefully. White chocolate easily burns, yes, even in a double boiler!

Add the condensed milk (at room temperature) and stir over the double boiler until it becomes a cohesive paste. Add the Baylies and pistachios.

Pour the mixture in to a greased or foiled baking pan. The size of your pan should coincide with the size you want your pieces to be. I used a pie-pan.

Let cool in the refrigerator for at least 2 hours before dividing in to pieces.
