Pomegranate and strawberry ice cream

Home made ice cream has very rapidly become the desert of choice lately. The Missus got an ice-cream maker from a pair of friends a while ago, and we have recently started using it, alot! And what a brilliant thing it is! Now, you might wonder why you need an ice cream maker to make ice cream. Well, you dont NEED it persay, but it gives it the proper consistency. I'm sure you've tried to freeze  smoothies and the like and noticed that when it freezer, the water seems to crystalize. This isn't very ice creamy or pleasant to eat. The ice cream makers continually rotates the ice cream mixture so that this doesn't happen.


So I obviously bought the ice cream attachment to my KitchenAid. It's ice cream bowl is larger than the one the Missus has, so I can make more at the time ;) Yum yum yum! All the recipes we've tried are from the collection of the Spunky Coconut, so they are dairy and sugar free. Guilty pleasure, that don't need to make you guilty. It's a pretty sweet deal, if you ask me!

This recipe is inspired by her. The Missus bought her Ice cream book, and I've been trying out some of the recipes. I tried this one variety with strawberry and rhubarb which was really really yummy. But she hasn't posted in her website, so I won't either. If you like rhubarb and strawberry, or ice cream for that matter, buy her book. I promise you it is worth it!

Strawberries and summer are pretty much synonymous. Back home at my parents, I used to go strawberry picking at this farm about 10minutes walk from my childhood home. Strawberry bonanza! And this summer the Missus introduced me to this most amazing thing! We pretty often eat fruit salads as desert (prior to this ice cream obsession!) and one evening she paired strawberry with pomegranate. I was so sure she had added sugar or something to it, because it was so very sweet. But no, no extra sweetener, just pure strawberry and pomegranate! I fell in love, and cannot stop thinking about how amazing it tasted! So obviously, when this ice cream obsession started, I started thinking about making a strawberry pomegranate ice cream!  Unfortunately, we actually found it to taste too little. Next time I think there should be more strawberries, probably another half cup or so, and a little lemon juice or zest for extra zing.


Pomegranate and stawberry ice cream


This smooth pomegranate and strawberry ice cream is gluten free and free of refined sugars, Paleo By

Ingredients:
1 Pomegranate
1 cup strawberries
2 dates
1/2 cup cashew milk
1 1/2 cup coconut milk
1 tsp xanthan gum
5 cherries
Prep time:
Cook time:
Total time:
Yield: 600 ml
Directions:
Add all the ingredients in a blender and blend at high speed untill smooth. Chill in the refrigerator for a minimum of 30 minutes. Pour the chilled mixture slowly into the ice cream maker and follow the instructions for your machine. Serve with Fresh strawberries and cherries.
